Made from heating. Toffee is created by mixing sugar or molasses with butter and cooking it to a very high temperature, between 149 to 154 degrees Celsius. This extreme heat transforms the sticky mixture into something hard and crunchy.
The hard crack stage. Candy makers use a special heating step called the hard crack stage to make toffee. At this temperature, the sugar becomes so hard that it snaps and breaks easily instead of being chewy or soft.
