Underground treasure. Beetroot is the taproot of a plant, meaning it's the main root that grows straight down into the soil like a thick underground carrot. It stores energy and nutrients that the plant needs to survive.
Bright natural colors. Most beetroots are deep red or purple, but some are golden yellow or white inside. The vibrant color comes from special plant pigments that are actually really good for your body.
Ancient origins. Beetroot originally came from places around the Mediterranean Sea and even India, and people have been growing and eating them for thousands of years.

Many ways to eat. You can eat beetroot raw in salads, roast it until it's sweet and soft, boil it, or even pickle it to make it tangy. Some people even juice it or add it to smoothies.
Leaves are food too. The green leaves growing on top of beetroot, called beet greens, are a nutritious leafy vegetable that you can cook and eat just like spinach.
