Undeveloped flower buds. What you eat when you have cauliflower is called the curd, which is actually hundreds of tiny flower buds all packed together super densely. The plant stopped them from opening up so we could eat them instead.

Many different colors. Most cauliflower is white, but you can also find it in green, orange, or even purple versions. They all taste pretty similar, but the colorful ones have different nutrients and look way cooler on your plate.

Part of a big family. Cauliflower is in the same plant family as cabbage, broccoli, Brussels sprouts, and kale. They're all different versions of the same species, Brassica oleracea, just bred by farmers to look and taste different.

Fancy fractal patterns. A special variety called Romanesco cauliflower has curds that grow in spiral patterns called fractals, where the same shape repeats over and over again at different sizes. It looks like nature's artwork.
