Made from Manchega sheep. Manchego cheese comes only from the milk of special Manchega sheep that live in La Mancha, a region in Spain. These sheep produce milk that makes this cheese unique and flavorful.
Ages for months or years. When Manchego is first made, makers let it sit in caves or aging rooms for at least 60 days, but sometimes for up to 2 years. The longer it ages, the harder and more intense the flavor becomes.
From La Mancha region. Manchego comes from La Mancha in central Spain, the same region where the famous character Don Quixote had his adventures. This area has been famous for making this cheese for hundreds of years.
Protected by law. Real Manchego has a special protected label that means it must be made in La Mancha with only Manchega sheep milk. This keeps the cheese authentic and helps protect Spanish cheesemakers.
Creamy and nutty taste. Manchego has a smooth, creamy texture with a slightly nutty and rich flavor. You can eat it young when it's softer or aged when it becomes firmer and more complex.
