Bitter orange power. Bitter oranges are the classic fruit for marmalade because they have tons of pectin, the natural stuff that makes jam thick and jiggly instead of runny.
Peel is the star. Unlike regular jams that blend fruits into smoothness, marmalade keeps chewy strips of peel floating in it, which gives it that unique tangy bite.
The pectin secret. Pectin is a gummy substance in fruit skins that acts like nature's glue, helping marmalade hold together perfectly when it cools down.
