A chemical mixture. Baking powder is made of three main ingredients mixed together: a base (like baking soda), a weak acid, and a desiccant (usually cornstarch) that keeps them from reacting too early.
Creates bubbles instantly. When you add liquid to baking powder, the base and acid react and release carbon dioxide gas, the same gas in fizzy drinks. These tiny bubbles expand in your batter and make it rise.
Makes things fluffy. All those bubbles trapped in your cake or pancake batter create a light, airy texture instead of something dense and heavy. That's why your cupcakes are fluffy, not like hockey pucks.
Double acting magic. Some baking powders release bubbles in two stages: first when they get wet, and again when they get hot in the oven. This helps your baked goods rise extra well.
