Smoke does three things. It cooks the food with heat, gives it a delicious smoky flavor, and helps preserve it by keeping harmful bacteria away. People have been smoking food for thousands of years.
Wood matters a lot. Different types of wood like hickory, oak, and apple create different flavors when they burn. Fruitwoods make sweet smoke, while stronger woods like mesquite create bold tastes.
Not just meat. While smoking is famous for beef brisket and salmon, people also smoke cheese, nuts, tea, and even salt to add incredible flavor to everyday foods.
Low and slow wins. Most smoking happens at low temperatures over many hours or even days, which makes the food tender and lets the smoke flavor soak all the way in.
Preserving without refrigerators. Before freezers existed, smoking was one of the best ways to keep fish and meat from spoiling, which made it hugely important for survival during long winters.
