Cream to butter. A butter churn takes cream, which is smooth and pourable, and transforms it into solid butter through constant churning. The shaking breaks apart the fat globules in the cream until they stick together and separate from the liquid.
Pole and crank power. Early churns used a long pole that went through the top of the container, which people would push up and down. Later designs had a crank that you turned by hand, making the job a little bit easier.
Farm family work. Making butter was an important job in farm households, and children often helped with the churning. It could take 30 minutes to an hour of steady work to turn cream into butter.
Before refrigerators. Before modern refrigeration, butter churning was how families preserved cream and made their own fresh butter at home. The solid butter kept longer than liquid cream and was essential for cooking and eating.
The science inside. Churning works because it breaks up the protective membranes around fat droplets in cream, letting them clump together. This separates the butter from the liquid leftover called buttermilk.
