Cool Facts
Swiss treasure. Raclette comes from a special region in Switzerland called Valais, where it has been made for a very long time.
Scraping cheese. The word raclette actually comes from a French word meaning to scrape, because that is exactly what you do, scrape the melted cheese off with a special tool.
Heat and melt. You hold a wheel of cheese near a heat source (like a candle or special machine) until the outside gets melty and soft, then you scrape it right onto your plate.
Potatoes are perfect. Raclette is traditionally served with boiled potatoes, pickles, and sometimes cured meats, all waiting to be topped with that warm, melted cheese.
Protected quality. Real Raclette cheese from Valais is so special that it has official protection to make sure only the real thing gets the name.
