Two things at once. A tagine is both a yummy stew AND the special pot you cook it in. The word refers to both the food and the cone-shaped earthenware dish that makes it so special.
Cone-shaped cooker. The tagine pot has a tall, pointed lid that looks like a cone. This shape is genius because steam rises up and condenses on the lid, then drips back down to keep the meat and vegetables moist and tender.
From Morocco. Tagine comes from Morocco, a country in North Africa. It's one of the most famous dishes in Moroccan cooking and has been made the same way for hundreds of years.
Slow-cooked perfection. A tagine cooks slowly over low heat, letting all the flavors blend together beautifully. You might find meat like lamb or chicken mixed with dried fruit, nuts, and warm spices like cinnamon and ginger.
